Alex Mok

With extensive culinary experience in some of Vancouver’s renowned kitchens, Chef Alex Mok brings a diverse blend of experiences and international flavours to The Westin Bayshore, Vancouver’s contemporary lobby lounge.

Chef Alex Mok has designed menu concepts for Vancouver’s The French Table and Yaletown’s Cache Bistro, and implemented the menu at HJU:Z (H Lounge), featuring global cuisine inspired by Howard Hughes’ world tour. Though Chef Mok is passionate about creating exotic dishes, he loves sourcing locally from the West Coast, with fresh ingredients like sea urchin and spot prawns. Much of Chef Mok’s culinary talent and skills were cultivated under the mentorship of the King of Belgium’s Head Chef, who taught him the proper French technique that he has developed since.

He has held positions as Commis Chef at Fairmont Waterfront and The Westin Grand hotels, and most recently as Executive Chef at Boathouse Restaurant. Chef Mok has appeared on cooking segments for Fairchild TV in addition to TVB and Now TV.
